Cherry Berry Pie

Ingredients:

  • Crust of choice
  • 4 1/2 cups frozen Montmorency tart cherries
  • 1 cup sugar
  • 1/4 cup cornstarch
  • 1/2 cup Cherry Republic Montmorency Dried Cherries
  • 1/2 tsp almond extract
  • 1 tsp lemon juice
  • 1 1/2 cups of frozen blueberries

Crumb Topping:

  • 1 cup sugar 
  • 1 cup all purpose flour
  • 1/2 tsp salt
  • 1 stick softened butter

Instructions:

  1. Preheat oven to 400 degrees.
  2. Combine frozen cherries, dried cherries, sugar, and cornstarch. Stir constantly on medium high heat until boiling. Boil for 1 minute or until thickened. 
  3. Add almond extract and lemon juice. 
  4. Pour blueberries in bottom of pie shell and pour cherry mixture over them. 
  5. Mix together all crumb topping ingredients until crumbly. 
  6. Cover filling with crumb topping. 
  7. Bake for 45 minutes to an hour or until bubbling and crust is golden brown and enjoy!
