Jam Filled Oatmeal Bars

These buttery brown sugar oatmeal bars with a fruity jam filling are the perfect simple snack that everyone will love. This super easy recipe comes together in minutes and the best part of all, you can customize it with any of our Cherry Republic jams and preserves

Ingredients:

  • 1 1/4 cup all purpose flour
  • 1 cup old fashioned oats
  • 1/4 tsp salt
  • 1/2 tsp baking soda
  • 10 tbsp unsalted butter, melted
  • 1/2 cup light brown sugar, packed
  • 1 tsp vanilla extract 
  • generous 3/4 cup of jam or preserves (we used Michigan Blueberry Jam)

Instructions:

  1. Preheat oven to 350F. Line 8x8 pan with foil or parchment paper. Lightly spray with nonstick spray.
  2. In a medium bowl, combine flour, oats, salt, and baking soda. 
  3. In a large bowl, whisk butter, brown sugar and vanilla until well combined. Add dry ingredients and stir with spatula until well combined. 
  4. Pull out 3/4 cup of the crumble dough and place it in the refrigerator for the topping. Dump the remaining dough into the prepared pan and press it down into an even layer. Bake for 10 minutes.
  5. Remove from the oven and spread the Michigan Blueberry Jam on top of the base leaving a quarter inch around the outside. Take the reserved crumble dough from the fridge and crumble it over the top of the jam layer. Return to oven and bake for 15-18 minutes, until the topping is light golden brown. 
  6. Let cool at room temp for softer bars or in the fridge to firm them up and enjoy!
