One of our favorite summer recipes combines the cool crispness of a salad with plump Montmorency Dried Cherries and the Asian-inspired BBQ taste of our Cherryaki Sauce. Pair our Cherryaki Lettuce Wraps with a crusty loaf of bread and a chilled bottle of wine, and you have the perfect late-summer dinner.
Cherryaki Chicken Lettuce Wraps
1 1/4 lbs. boneless, skinless chicken breasts
2 tbsp. canola oil
6 tbsp. Cherry Republic Cherryaki Sauce
1 1/2 cup shredded carrots
2/3 cup Montmorency Dried Cherries
1/2 cup green onions, chopped
1/3 cup almonds, toasted & sliced
2 heads of lettuce (bibb or romaine), washed
Heat oil in a large pan over medium heat; cook chicken 3 to 4 minutes on each side. Remove when cooked, cool and dice.
In a large bowl, add chicken and Cherryaki sauce and toss until coated. Add remaining ingredients and mix together.
On a large sheet tray, lay out large lettuce leaves, spoon chicken filling onto each lettuce leaf. Serve and enjoy!
